That is now sitting in my stomach.
The best part of this fantastic meal?
It is completely vegan.
Nothing from an animal is on that overflowing plate.
Don't get me wrong.
I love cheese and eggs- about the only two things I eat from animals. But I am trying to teach myself how to eat without these necessities.
Maybe not all the time, but every once in a while.
And friends, everything you see here was delish! And super healthy.
The tortilla is even vegan and packed full of fiber!
