The other day I made pumpkin pound cake.
It was pretty amazing if I do say so myself.
They whole family agreed. It was gone the next day.
What you need:
1 cup granulated sugar
1 cup brown sugar
1 cup canola oil (I didn't have this, so I used olive oil. Tasted the good to me)
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
11/2 teaspoons pumpkin pie spice
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 package instant vanilla pudding mix
1 can (15 ounces) pumpkin puree (or about 1 1/2-2 cups homemade pumpkin puree)
Confectioners' sugar for dusting
First, in a large bowl, combine sugar and oil until blended completely. Add eggs, one at a time- blend completely between each addition.
In a separate bowl combine all dry ingredients: flour, baking soda, cinnamon, nutmeg, pumpkin pie spice, ground cloves, salt and pudding mix.
Add dry ingredients to egg mixture alternating with the pumpkin puree. Beat well after each addition.
Transfer to a greased bundt pan.
Bake at 350 degrees for 45-60 minutes (it took min 1 hour 15 minutes).
Check periodically with a toothpick.
Remove from pan and cool completely before dusting with confectioners' sugar.

It was a total hit around here. It was out of the oven for 5 minutes and a piece had already been cut out (thanks Aaron).
